Grilled Chimichurri Cauliflower Steaks
If you think cauliflower is boring, this recipe may completely change your mind.
These grilled chimichurri cauliflower steaks are smoky, garlicky, fresh, and packed with flavor. The crispy edges from the grill mixed with that bright homemade chimichurri sauce make this one of my favorite summer recipes year after year.
I make these for BBQ nights, quick dinners, and even holidays when I want something lighter on the table. The best part? You can make them on the grill OR roast them in the oven when the weather doesn’t cooperate.
And trust me… don’t skip the extra chimichurri for dipping bread. That may honestly be the best part.
My all time favorite most versatile recipe ever all year round! Chimichurri is the traditional condiment to serve with steak. And it still is … but NOT many use that sauce with vegetables and they are wrong …ha ha ha
This is an incredibly easy recipe to make.
INGRIDIENTS THAT YOU WILL NEED to make CHIMICHURRI SAUCE
- Cilantro 1 cup chopped
- Parsley 1/2 cup chopped
- Garlic 5 cloves minced or more if you love garlic like I do
- Red Pepper flakes 1tsp or add more if you like more spicy like me
- Oregano 1/2 tsp
- Lemon 1/2 squeezed
- Red wine vinegar 2 tablespoons
- Olive oil 2/3 cup
- Salt and pepper to taste

Mix all ingredients together and set it aside to let the flavors combine together. Add salt and pepper to taste.




To cut the cauliflower steaks, remove the leaves from the base of the cauliflower and cut the cauliflower into steaks that are each 1/2 inch thick, being sure to get a portion of the core in each one as this will hold them together. I usually cut it in half first and go from there . Cauliflower can be easily breakable and finicky so don’t worry if you are going to have few florets. They can be used too and they taste as good but you will need to grill them on aluminium foil



Set your grill to a medium temperature.

Brush a little of olive oil on the steaks and sprinkle with salt. Place your cauliflower on the hot grill for 5 min on each side.I like my veggies with a little of a crunch

Add thin layer of chimichurri sauce to the cauliflower and grill for 5 extra minutes

Don’t forget to lick your bowl … like I always do …ha ha ha Bread is really helping to clean all up! Another way to enjoy that delicious sauce!

And you are done!


Oven Roasting version
You can also prepare Cauliflower in the oven if your grill is “crowded” with meat. Steps are the same…salt raw cauliflower steaks and brush with little of olive oil
Roast at 450 for 15 minutes and apply Chimichurri sauce and roast for additional 5 minutes

Grilling vs. Oven Roasting Tips
One of my favorite things about this recipe is that you can make these cauliflower steaks either on the grill or right in the oven.
For the Grill
Grilling gives the cauliflower a smoky flavor with crispy charred edges that pair perfectly with the fresh chimichurri sauce.
Preheat grill to medium-high heat
Brush cauliflower steaks generously with olive oil
Grill about 5–7 minutes per side
Try not to flip too early or the steaks may break apart
A grill basket can help with smaller pieces
If your cauliflower starts browning too quickly, move it to indirect heat for a few minutes until tender.
For the Oven
No grill? No problem. The oven version is just as delicious and gets beautifully roasted edges.
Preheat oven to 450°F
Place cauliflower steaks on a parchment-lined baking sheet
Brush with olive oil and season well
Roast for about 15 minutes
Carefully flip and roast another 10–15 minutes until golden brown
For extra color and crispy edges, turn on the broiler for the last 1–2 minutes.
My Favorite Way
I personally love the grilled version during summer because the smoky flavor with fresh chimichurri just tastes like patio season to me. But honestly? I make the oven version all year long when I want something easy and cozy.
