My family is not big on eating leftovers so I have to get creative so not much is wasted. My Mom and Grandmother were PRo’s at that. I have to be honest I love good stew like meals and I absolutely love one pot dinners so not much cleaning is there after cooking. Don’t you just love that ? Today I like to show you what you can do with leftover chicken. Not going to lie .. I did experiment with this dish but we loved it so much that it is a must to share with you all. Let’s make one pot chicken pasta dinner.
Let’s get to roots
One of my favorite dishes from my childhood was BIGOS. It was a mix of what we had in the refrigerator, sauerkraut, fresh cabbage tomatoes and many other little things that i will for sure want to write about some day. It is a must dish for the holidays.
So this one pot chicken pasta dinner is exactly what I am doing here. Making a that dinner I kept in mind what my family particularly kids love and of course what is in my refrigerator
Thank Goodness we are good on meat, cheese and pasta and of hot sauces of different kind.
Ingredients that will go to my dish
- Chicken – Mine is cooked leftover from night before but I also used a boiled one too
- Chopped one small onion or half a bunch of scallions .. Whatever you have
- Garlic minced
- 32 oz of chicken stock. You can use chicken cube and dilute into hot water too. I have done that too
- Cheese .. I use mozzarella , cream cheese and Mexican mix that is always in my refrigerator
- Red pepper flakes and some Italian herbs mix if you have one
- Whole tomatoes in 1 big can or even tomato sauce that you have left in your refrigerator
- Pasta of your choice
- and of course your Buffalo sauce or any other spicy one you have
Let’s begin making one pot spicy chicken pasta!
As you can see reading ingredients list all is flexible because content of your refrigerator changes .
Chop or pull apart chicken, onions and sauté in butter for couple of minutes. Add garlic and cook for 1 more minute.
Add chicken broth and your tomatoes. As I mentioned earlier it can be whole canned tomatoes, crushed or pureed or even tomato sauce. You may ask now but how much of it .. I would say depending what you have. I usually add 1 big can of tomatoes. The more of the sauce the better. Bring to a boil.
Submerge the pasta in the liquid. Cover and boil until al dente. Make sure to stir occasionally so pasta dont stick
When pasta is all dente reduce heat add your favorite hot sauce, cream cheese, cheddar, mozzarella whatever you have and stir. Add a sprinkle of red pepper flakes , italian herb mix some some dry cilantro if desired.
Pasta sauce will continue to thicken upon standing.
