Easy Naan Bread Recipe (With or Without Sourdough Discard

If you’ve been feeding a sourdough starter, chances are you’ve wondered what to do with all that discard. While I love using it in waffles, pancakes, and bread, this time I decided to try making homemade naan bread.My first batch wasn’t perfect, but it was delicious! The flavor was wonderful, especially served alongside homemade masala chicken. After a little trial and error, I learned that kneading the dough and using less flour while rolling makes a big difference in the texture.

The best part about this recipe is that you can make it with sourdough discard or without it. So whether you’re maintaining a starter or simply craving fresh flatbread, this easy naan recipe has you covered.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons sour cream or Greek yogurt
  • 1 tablespoon olive oil
  • 1/2 cup sourdough discard
  • 1/4 cup water
  • 1 additional tablespoon sour cream or Greek yogurt

Instructions

  1. In a medium bowl, combine flour, baking powder, baking soda, and salt.
  2. Add the sour cream (or yogurt), olive oil, and either the sourdough discard or water.
  3. Mix until a shaggy dough forms.
  4. Knead the dough for 3–5 minutes until smooth and elastic. If the dough feels dry, add a teaspoon of water at a time.
  5. Cover the bowl and let the dough rest:
    • With discard: 1–2 hours
    • Without discard: 20–30 minutes
  6. Divide the dough into 4 equal portions and shape into balls.
  7. Let the dough balls rest for 10 minutes.


  1. Lightly flour your work surface and roll each ball into a rough oval about 1/4 inch thick.


  1. Heat a skillet over medium-high heat.
  2. Cook each naan for 1–2 minutes per side until golden brown with bubbly spots.
  3. Brush with melted butter or garlic butter and serve warm.


Tips for Success

  • Don’t skip the kneading. It helps develop the gluten and creates a softer texture.
  • Use only a light dusting of flour when rolling the dough.
  • If the dough feels stiff, add a small splash of water.
  • A hot skillet creates those beautiful golden brown spots.
