Easy Bacon-Wrapped Parmesan Chicken Bites

I had two chicken breasts, some leftover bacon, and three people to feed. Two chicken breasts didn’t exactly look like enough dinner, so instead of serving them whole, I sliced them into smaller pieces. Let’s make bacon wrapped chicken dinner

And suddenly… I had a whole tray. 😂

I seasoned the chicken with some of my favorite pantry staples, wrapped each piece with bacon, added Parmesan, and baked everything in the oven. No standing over the stove, no frying pan splattering grease everywhere, and very little cleanup.

We each ate three pieces and still had plenty left!

This is definitely going into our regular dinner rotation.

The bacon keeps the chicken juicy while the Parmesan and Italian seasonings give everything so much flavor. I also like adding just a little pesto — not too much — for an extra touch of basil and garlic.

Ingredients

  • 2 boneless, skinless chicken breasts
  • Bacon, approximately 6–8 slices depending on size
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • 2–3 tablespoons grated Parmesan cheese, plus more for finishing
  • A small amount of pesto, optional

How to Make Bacon-Wrapped Chicken Bites

Preheat your oven to 325°F.

Cut the chicken breasts into fairly large bite-size pieces. They don’t have to be perfectly equal, but keeping them close in size helps them cook evenly.

Place the chicken in a bowl and season with paprika, garlic powder, onion powder, Italian seasoning, salt, pepper, and Parmesan cheese. Toss everything together until the chicken is nicely coated.

Cut the bacon slices into smaller pieces and wrap bacon around each piece of chicken.

Arrange the chicken on a foil-lined baking sheet or baking dish, leaving a little space between the pieces.

Add just a small dab or drizzle of pesto over some of the chicken if you like.

Bake for approximately 25 minutes, or until the chicken reaches an internal temperature of 165°F.

Cooking time can vary depending on how large you cut your chicken.

If you would like your bacon a little crispier, place the tray under the broiler briefly at the end. Watch it closely because bacon can go from golden to burned very quickly.

Sprinkle with a little additional Parmesan before serving.

What to Serve With It

We kept dinner simple with a baked potato and vegetables, but these chicken bites would also be delicious with rice, mashed potatoes, roasted vegetables, salad, or even pasta.

Another Way I Make This

I’ve made a similar version using whole chicken breasts.

Instead of cutting the chicken into pieces, season the whole breast and top it with fresh tomato slices, a little pesto, bacon, and Parmesan cheese before baking.

It’s delicious that way too, but cutting the chicken into smaller pieces is especially nice when you’re trying to make a smaller amount of chicken stretch a little further.

A Budget-Friendly Dinner

This entire chicken dinner cost me under $10, and we had leftovers.

That’s probably my favorite part.

I started out looking at two chicken breasts wondering whether there would be enough for three people. Once I sliced them, seasoned them, and wrapped them in bacon, the tray looked like I was feeding twice as many people. 😂

Sometimes it isn’t about buying more food — it’s just about serving what you have a little differently.

Easy, inexpensive, very little cleanup, and everyone loved it. That makes this one a keeper.
