Classic Moist Pumpkin Bread

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ¼ teaspoon clove (optional)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 can (15 oz) pumpkin purée ¼ cup milk (or evaporated milk for richness)
  • 1 teaspoon vanilla extract

🥣 Instructions

1. Prep your pan

Preheat your oven to 350°F.

Line a 9×5 loaf pan with parchment paper or grease it well.

2. Mix dry ingredients

In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and clove.

3. Mix wet ingredients

In a separate bowl, whisk together the granulated sugar, brown sugar, eggs, oil, pumpkin purée, milk, and vanilla.

4. Combine

Add the dry ingredients to the wet and gently mix until everything is combined. Don’t overmix — the less you stir, the softer the crumb.

5. Bake

Pour the batter into your loaf pan and smooth the top.

Bake for 55–65 minutes, depending on your oven. A toothpick should come out clean from the center.

6. Cool & slice

Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack.
