Leek and Roasted Garlic Soup

A simple, comforting soup perfect for busy days, chilly weather, and homemade bread on the side.

There’s something about a pot of soup simmering on the stove that just makes the whole house feel calmer. Today I’m making one of the coziest, simplest soups — Leek & Roasted Garlic Soup.

It’s creamy (even without cream!), naturally flavorful, and tastes like something your mama would have made on a quiet afternoon.

Leeks weren’t part of my childhood at all, but now? Ohhh I love them. And roasted garlic? Pure magic. If you’ve never roasted a whole garlic bulb before, get ready — it turns sweet, buttery, and melts right into the soup.

Add some crusty bread, a blanket, maybe a craft project on the table… and dinner is done.

🧄 Ingredients

For the roasted garlic

  • 1 whole garlic bulb
  • 1–2 tsp olive oil
  • Pinch of salt

For the soup

  • 3 large leeks (white + light green parts),
  • sliced 2 medium potatoes, peeled & diced
  • 2 tbsp olive oil or butter
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup cream or half-and-half (optional but cozy!)
  • Salt & pepper to taste
  • Optional: chives, extra cream drizzle, parmesan, croutons

🔥 How to Roast Garlic

1. Preheat oven to 400°F.

2. Slice ¼” off the top of the garlic bulb so the cloves show.

3. Drizzle with olive oil + sprinkle with salt.

4. Place on foil (or in a small dish) and wrap tightly.

5. Roast 35–45 minutes until soft, golden, and caramelized.

6. Let cool and squeeze the cloves out like butter.



🍲 How to Make Roasted Garlic Leek Soup

Step 1 — Prep the leeks

Slice off the roots and tough dark green tops. (optional, I use all ) Cut the white and light green parts into rings and rinse well — leeks love to hide dirt.

Step 2 — Sauté

In a big pot, add the olive oil or butterAdd the leeks and cook 5–7 minutes until soft and glossy.


Step 3 — Add potatoes & broth

Add diced potatoes and pour in the broth. Bring to a boil, then lower the heat and simmer 20 minutes until potatoes are tender.



Step 4 — Add roasted garlic

Squeeze the roasted garlic straight into the pot (all of it!). This is where the magic happens — it melts right in.

Step 5 — Blend if you choose

Use an immersion blender to puree until silky smooth.

Step 6 — Make it creamy (optional)

Stir in the cream or half-and-half for extra richness. Season with salt and pepper to taste.

🥣 Serve & Enjoy

Ladle into bowls and top with:chopped chives black pepper drizzle of cream parmesan croutons or a swirl of olive oil
