Polish Cabbage Soup

If you’ve been with me for a while, you know I love my cabbage recipes. I already have kapuśniak and bigos on the blog — both made with sauerkraut and both rich, bold, and very Polish.

But today I’m sharing something completely different.

Something lighter, sweeter, and so comforting — the kind of soup my mama made whenever there was a leftover piece of fresh cabbage in the fridge.

This is Polish fresh cabbage soup (zupa z świeżej kapusty): the simple, brothy version.

No sour flavor, no heavy stew — just pure, cozy comfort in a bowl.

It tastes like home. It tastes like childhood.

And it’s the perfect “use what you have” recipe.

Some days I love this soup with a slice of crusty bread. And some days I want it a little heartier, so I microwave a potato, cut it open, and drop it right into the bowl. It melts just slightly into the broth…

Oh my goodness. Pure comfort.

I like having both options — it depends on the mood.

🍲 Polish Fresh Cabbage Soup (Not Kapuśniak!)

⭐ Ingredients

  • ½ head fresh cabbage,
  • chopped 1–2 carrots, shredded or sliced
  • 1 onion (optional)
  • Bone broth or water + soup bones Cooked meat from the broth
  • Fresh dill Fresh parsley
  • 1–2 bay leaves
  • 6–8 whole peppercorns
  • Salt & pepper to taste
  • Potato (optional, for topping)

⭐ Instructions

In a large pot, simmer your bone broth with meat. Add chopped cabbage, shredded carrots, and onion if using. Add bay leaves and whole peppercorns. Cook until the cabbage is soft and the soup smells naturally sweet. Stir in fresh dill and parsley. Season with salt and pepper. Serve with crusty bread or top with a microwave-baked potato for a heartier version.
