Extra Fluffy Homemade Pancakes
Some dinners just happen… and honestly, those are usually the best ones.
Yesterday I wasn’t planning anything fancy, but I had a few simple ingredients sitting on the counter, and before I knew it… pancakes were on the pan. Love good breakfast for dinner
Golden, soft, and just a little crispy on the edges — the kind that don’t even need much to taste amazing.
We ended up having them for dinner, and nobody complained one bit 🤍

Ingredients to Make Fluffy Pancakes
(Keep it simple — you can adjust later if you want exact measurements)
- 1 cup flour
- 1 egg
- ¾ cup milk
- 1–2 tablespoons sugar
- 1 teaspoon baking powder
- Pinch of salt
- Splash of vanilla (optional but so good) Butter or oil for the pan

How to Make Them
In a bowl, mix the egg, milk, and sugar Add flour, baking powder, and salt Stir just until combined (don’t overmix!) Let the batter rest for 5–10 minutes. You batter should be on a thicker side


At this point, the batter is ready to cook, but I like to add a grated apple — just like my mama used to.
We didn’t grow up using maple syrup, so that little bit of sweetness always came from apples and a dusting of powdered sugar



Heat a pan over medium-low heat Add a little butter or oil Spoon batter into small rounds Cook until bubbles form, then flip Cook until golden and fluffy
