Roasted Cauliflower Kale Salad
Do you love salads? Salads for me right after soup are the most favorite dishes. Love them plain, with surprises with meat or without. I am always experimenting when it comes to salads. They are perfect food on the go and super healthy. Today I like to show you how I make kale salad with roasted cauliflower. This salad was inspired by my favorite Chopt Restaurant where you can experiment with your favorites. It is time to write all up for you and hopefully my kids. Healthy way to eat
INGREDIENTS
For cauliflower
- 1 head cauliflower, leaves removed, bottom stem trimmed
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
For salad
- 1 large bunch of kale stems removed and leaves roughly chopped
- 2 scallions, thinly sliced
For vinaigrette
- 2 tablespoons balsamic vinegar
- 1/4 cup olive oil
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
INSTRUCTIONS
Preheat the oven to 425 degrees F.
There are so many ways to eat cauliflower: raw and roasted or steamed. I have tried it all and it seams for this recipe roasted version is my favorite
Cut the cauliflower lengthwise into 3/4-inch slices. On a sheet pan, toss the cauliflower 1 tablespoon olive oil, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper and red pepper flakes.
Arrange the cauliflower in a single layer.
Roast for 20-25 minutes, flipping halfway through cooking, until browned.
For the vinaigrette, whisk together the balsamic vinegar, olive oil, salt and pepper in a small bowl. Drizzle over the salad. You can also use your own favorite dressing

Variations
Expanding my repertoire, I made a roasted cauliflower kale salad.
I like to top my roasted cauliflower kale salad with some feta, nuts or any seeds I have at home. I did also add some cherry tomatoes too
My favorite lunch version is adding croutons with some grilled chicken .. yumm
