Easy Chicken Stir-Fry with Peppers and Green Beans
Dinner Out of “Nothing”
Some days, instead of pulling out the glue gun, I get creative in the kitchen. Tonight was one of those days. With some chicken, a few colorful peppers, and a handful of green beans, I made a simple stir-fry that hit the spot. Who doesn’t love healthy one pan chicken dinner here we go
Just like crafting, it’s proof that you can make something beautiful and elegant out of “nothing.”
Ingredients
- 1 lb chicken breast (or thighs), sliced thin
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp cornstarch (optional, helps coat chicken)
- 2 tbsp oil (olive or sesame)
- 2 cloves garlic, minced
- 1 small onion, sliced
- 1–2 bell peppers, sliced (red, yellow, or orange)
- 1 cup green beans, trimmed
- 3 tbsp stir-fry sauce*
- Salt & pepper to taste
- Optional garnish: sesame seeds, chopped green onions
* Stir-fry sauce:
- 2 tbsp soy sauce
- 1 tbsp honey (or sugar)
- 1 tbsp vinegar (rice vinegar, apple cider vinegar, or lemon juice — whatever you have).
Instructions how to make Easy Chicken Stir Fry
Toss sliced chicken with 1 tbsp soy sauce and cornstarch.

Let it rest while you prep the veggies. Heat oil in a large skillet or wok. Cook chicken until golden and cooked through. Remove from pan.
Add garlic and onion to the pan, sauté for 1–2 minutes until fragrant.

Stir in peppers and green beans. Cook until tender-crisp, about 5 minutes.

Return chicken to the pan. Pour in stir-fry sauce and toss everything together. Cook 2–3 minutes until the sauce coats evenly.

Serve hot over rice, noodles, or enjoy just as it is. Your healthy one pot chicken dinner is ready . That is what I call healthy stir fry recipe and super colorful

Notes & Variations
Swap veggies → try broccoli, snap peas, carrots, or zucchini. Add spice → a pinch of red pepper flakes or drizzle of sriracha. Meal prep friendly → leftovers reheat well for lunch the next day.
