Some days, instead of pulling out the glue gun, I get creative in the kitchen. Tonight was one of those days. With some chicken, a few colorful peppers, and a handful of green beans, I made a simple stir-fry that hit the spot. Who doesn’t love healthy one pan chicken dinner here we go

Ingredients

  • 1 lb chicken breast (or thighs), sliced thin
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp cornstarch (optional, helps coat chicken)
  • 2 tbsp oil (olive or sesame)
  • 2 cloves garlic, minced
  • 1 small onion, sliced
  • 1–2 bell peppers, sliced (red, yellow, or orange)
  • 1 cup green beans, trimmed
  • 3 tbsp stir-fry sauce*
  • Salt & pepper to taste
  • Optional garnish: sesame seeds, chopped green onions

* Stir-fry sauce:

  • 2 tbsp soy sauce
  • 1 tbsp honey (or sugar)
  • 1 tbsp vinegar (rice vinegar, apple cider vinegar, or lemon juice — whatever you have).
