Apple Ricotta Cake
Here it goes again ! My hubby went to Costco and bought Ricotta cheese in huge quantities so its time to bake! I love good ricotta cakes! Shared a lot of them on my blog so make sure to check it out. This time let’s make apple ricotta cake ! Delish dessert that doesn’t require much work! Who doesn’t like that ? No me ..lol
Ingredients
- 3-4 large apples
- 3/4 cup of sugar
- 3 large eggs
- 2 oz of butter
- 1 cup of milk
- 1 1/2 cup of ricotta chees
- 1 lemon (juice and zest)
- 1 teaspoon vanila
- 1 Tablespoon baking powder
- 2 cups of flour
- powdered sugar to decorate
How to make Apple Ricotta cake
Preheat oven to 375 F
Prep apples .. Core and if you like you can peel them but it is not necessary . I only peel Granny Smith apples since their skin is thick
Toss sliced apples with lemon juice and set aside
In a large bowl add eggs and sugar and beat well till it is smooth and fluffy
Add ricotta, butter , milk, vanilla extract and lemon zest and beat well
Add flour, cornstarch and baking powder . Mix until no flour is visible
Prep your 9 inch pan and pour batter in it .
Arrange sliced apples on top of your batter . I like to start on the outside and interlock my slices till I reach middle
Bake for 45- 55 min until skewer comes out clean when inserted in the middle
Let it cool of completely to decorate with confection sugar

Delish dense moist apple ricotta cake
Ingredients
- 3-4 large apples
- 3/4 cup of sugar
- 3 large eggs
- 2 oz of butter
- 1 cup of milk
- 1 1/2 cup of ricotta chees
- 1 lemon (juice and zest)
- 1 teaspoon vanila
- 1 Tablespoon baking powder
- 2 cups of flour
- powdered sugar to decorate
Instructions
Preheat the oven to 350F (180C).
Peel and remove the core of the apples, and cut in thin slices. Toss with lemon juice and set aside.
In a large bowl add the 3 eggs and cup of sugar. Beat well with electric mixer until light and fluffy.
Add the milk, ricotta and mix some more.
Add the lemon zest and melted butter (cooled down) and mix.
Add the flour, baking powder and salt and mix just until combined.
Add the apple slices and fold with a spoon.
Grease or line with parchment paper a 9-inch baking pan.
Add the batter and level. Bake at 350F for about 45 minutes, or until set.
Sprinkle with powdered sugar if you like. And enjoy!
