Polish Shepherd Pie aka Kartacze

Let’s be honest — this is not your British shepherd’s pie with mashed potatoes on top and an oven timer ticking.

This is a Polish-style comfort dish that takes all the cozy kartacze flavors and puts them in one hearty, hand-shaped meal.

We boil them the traditional way — because that’s how mama did it.

But if you’re feeling lazy, rebellious, or your pot is already full of pierogi… guess what?

You can flatten the whole thing into a casserole dish and bake it too. 😉

📝 Ingredients:

For the Filling:

  • 1 lb ground pork,beef, or a mix
  • 1 onion, diced
  • Salt, pepper,
  • marjoram to taste
  • Optional: minced garlic or sautéed mushrooms

For the Potato Dough:

  • 5–6 medium potatoes,
  • boiled and mashed
  • 1 small raw potato, finely grated
  • Salt & pepper
  • 1 egg (optional)
  • 1–2 tbsp potato starch or flour, as needed to hold it together

🥄 How to Make Kartacze :

Cook the filling: Sauté the ground meat and onions with your seasonings. Set aside to cool slightly.

Make the dough: Boil the potatoes, mash them, then mix in the grated raw potato. Add egg, starch, salt, and pepper. The texture should be soft but moldable. Shape it like kartacze:

Wet your hands, scoop some dough, flatten it, add filling, and seal it into an oval or thick dumpling.

Think rustic — no perfection required. Boil (like mama did): Bring a large pot of salted water to a gentle boil. Carefully drop in your dumplings and cook until they float plus 4–5 minutes more. Don’t overcrowd the pot.

🔄 Alternate Baking Method (Because Life Happens):

Not in the mood to shape?

Spread half the dough in a greased casserole dish, layer in the meat, then cover with the remaining potato.

Bake at 375°F (190°C) for about 30–35 minutes until lightly golden. Add butter or fried onion on top for Polish flair.

Because it’s got meat, potatoes, and pure comfort…

But instead of a crust or mash on top, we tuck it all inside the potato dough, like our grandmas did.

Boiled or baked — either way, this is a warm hug on a plate.
