Country French Style Garlic Soup

Ingredients
- large garlic head
- bunch of Sage
- 1 egg yolk
- 60 oz Chicken or beef broth
- 1 tsp Dijon Mustard
- 2/3 olive oil
- Salt
Let’s make this delicious soup
Always loved when my Mama was making that soup. Super versatile and super easy to make. There are so many ways to make it but let’s start from the begining
Preparation of garlic
My Mama used to pick the biggest garlic head out of bunch since according to her larger heads of garlic are milder so I do the same
Wrap your garlic head and roast wrapped for 30-40 min at 400 degrees
Remove from cloves and Smush your garlic with fork
Boil your chicken or beef broth as we prep sauce for our soup
Garlic soup sauce
In a separate bowl mix egg yolk, mustard , salt and oil and. Wisk both until all ingredients are combined
Mix both together and gradually add to your chicken stock
add fresh sage or 1 tablespoon of dry one
My Mama often used slices of not too fresh bread that she topped with cheese and baked in the oven. Remember as it was yesterday dipping it in my soup . delish
Variation of Garlic Soup
You can pick and choose below ideas or combine some
Add a boiled potato ~ float a slice of toasted baguette on the soup and top with your egg. The French will sometimes poach an egg right in their bowl of garlic soup. I’m not sure that would cook the egg enough for American standards, but it sounds wonderful!
Add shredded chicken, or sausage or roasted bacon
Add veggies like carrots, celery, leeks
Stir in leafy greens like spinach, kale, or Swiss chard just before serving for added freshness and nutrition.
Sprinkle grated Parmesan or Gruyère cheese on top of your garlic soup just before serving for a rich and savory finish.
Instead of boiling the garlic, roast whole garlic cloves, mash them, and add them to the soup for a smokier flavor.
Incorporate caramelized onions for a deep, sweet undertone that complements the garlic.

Hearty French Country Style Garlic Soup
Ingredients
- 1 large garlic head
- 1 tablespoon of dry Sage
- 1 egg yolk
- 64 oz of chicken stock
- 1 TBS Dijon mustard
- 2/3 c Olive oil
- pinch of salt
Instructions
- Roast garlic head for 30-40min at 400 degrees
- Boil chicken stock
- Remove garlic and mash
- Mix egg yolk with mustard and olive oil
- Combine all together
- serve with roasted slices of baguette
