Air Fryer One Pot Pork Roast with Vegatables

If you’ve ever tried to flip a pork roast and it clung to the pan like your last roll of transfer tape… welcome, friend. 😂 One pot pork roast with vegetables .. here we go
This cozy pork roast cooks low and slow in the air fryer oven so you can finish your project or chase your spoon-thieving dog out of the kitchen.

It’s my go-to when I want something hearty, hands-off, and comforting — with just one pot and no oven heat. I make mine in the Gourmia air fryer oven, and I swear it’s the unsung hero of our small family kitchen.

Set it. Craft it. Eat it.

This cozy pork roast recipe is my go-to on busy crafting days. It sears itself, cooks low and slow, and gives me time to finish a project — or rescue a spoon from my dog Jack, a.k.a. Master Chewer with one angled tooth. 😂 and it is made in air fryer!! YES! pork roast in air fryer

🛒 Ingredients:

  • 3–4 lb pork roast (shoulder or loin)
  • 4–5 garlic cloves, smashed
  • 1 onion, quartered
  • 5–6 baby potatoes, halved if large
  • 4–5 carrots, chopped
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt & pepper
  • 1 cup chicken broth
  • Optional: 1 tbsp apple cider vinegar or balsamic

🔥 Instructions

1. Preheat air fryer oven to 325°F (or Dutch oven to medium-high heat).

Set your Gourmia to roast mode if using.

2. Sear roast in oil, 3–4 mins per side.

Let it naturally release before flipping — if it sticks, it’s not ready!

3. Add garlic, onion, potatoes, and carrots around the meat.

Sprinkle seasonings over everything.


4. Pour broth around roast. Add vinegar if using.

Cover tightly with a lid.

5. Roast at 325°F for 2.5–3 hours until fork-tender.

(If using air fryer oven, check halfway and add broth if needed.)

🐾 Meanwhile, in Jack’s Corner…

While the pork was getting a good sear, Jack (our in-house spoon expert with one angled tooth and zero remorse) decided to offer his own culinary contribution…

He “distressed” my favorite wooden spoon.

Because apparently, it was too… plain. 😆🪵

“I call it Primitive Chew Chic.” — Jack, probably.


Don’t worry — he’s fine, the spoon is retired, and dinner still made it to the table (miraculously)

Let the roast sear fully before flipping for best crust Potatoes go in raw and come out soft and buttery Roast can be made in a regular Dutch oven too
