Usually, a whole cabbage head will yield 4 or 5 steaks that hold pretty well together. Don’t try to cut the core out – if you do, the wedges will fall apart.
Once they cut thick cabbage slices, we season them with olive oil, salt, pepper, Italian seasoning, garlic, paprika, and parmesan before roasting them. This allows the cabbage to get a little browned with crispy edges.
