Ingredients:
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed
- 1 medium tomato, chopped
- 1 small red bell pepper, diced
- 2–3 tablespoons fresh chopped cilantro (or parsley if preferred)
- Juice of 1 lemon (or to taste)
- 2 tablespoons olive oil
- pinch of dill or cilantro
Salt and black pepper, to taste
Instructions:
In a large bowl, combine the kidney beans and chickpeas. Add chopped tomato, bell pepper, and cilantro. Drizzle with lemon juice and olive oil. Season with salt and pepper. Gently toss everything together until well coated. Chill for 15–30 minutes before serving for best flavor.
