🛒 Ingredients

  • 6 medium russet or Yukon gold potatoes, peeled and cut into 1-inch chunks
  • 12 oz kielbasa sausage, sliced into rounds
  • 4 strips of bacon chopped
  • 1 medium yellow onion, diced
  • 2 stalks of celery sliced (optional)
  • 3 cloves garlic, minced
  • 2 carrots sliced
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil or butter
  • 1 teaspoon dried thyme (optional)
  • Salt and black pepper to taste
  • Optional: fresh parsley or dill or chives for garnish

Instruction how to make a soup

Brown the kielbasa
In a large soup pot sdd sliced kielbasa and chopped bacon and cook until lightly browned on both sides (about 4–5 minutes). Set aside

Sauté the aromatics
In the same pot, add onions and sauté until soft, about 5 minutes. Stir in garlic and thyme; cook another 1–2 minutes until fragrant.

Add potatoes and broth
Add the potato chunks and water of vegetable broth . Bring to a boil, then reduce to a simmer. Cook uncovered for 15–20 minutes, or until potatoes are fork-tender.

Add kielbasa and finish with cream
Return the kielbasa to the pot. Stir in the milk and heavy cream. Heat gently (do not boil) for 5–10 more minutes to meld the flavors. Season with salt and pepper to taste.

Serve hot
Ladle into bowls and garnish with chopped parsley or chives if desired. Serve with crusty bread for the ultimate cozy meal.
